We often had challenge dinners too. One group was sent for groceries and the folks remaining behind for the beer run were in charge of picking the theme – before the groceries showed up. Ah, fun times. And now, minus the beer runs and 8 people for dinner that is almost every night!

We did a guaca-recipe here too!!! We are proud to dub them (drum role) “GUACARITTO’S!”

Imagine that! Guacamole tucked in beside some refried black beans on a large flour tortilla, with a few tomatos and onions. Microwaved with cheese on top (might want to skip the waving of the tomatos) making a simply amazing Guacamole Burrito.
